Maybe. Its usually recommended that you use Campy ergo levers with Campy rear der. However, if you like to DIY, here's an article matching Campy ergo with shimano rear der, good luck:

Unknown. At this time DA 10 7800 only comes with a double crank option. If you want DA triple, you need to get DA 9.
Campy 9 works pretty well with Shimano 9. DA 10 just came out, so its still not clear how "well" it will work with Campy 10. I suspect it be very close and should work.
