re:Shimano to campy transformation

I've decided to move across to Campy from Shimano.

Splashed out on an expensive frame equipped with cheapish
Tagra/105/Ultegra mix with the intention to upgrade as and when. The time has arrived.

I know there is some cross-compatability between Shimano and Campy 9s.
I'm looking at getting some reduced price '03 Record9s. What would be my best plan of action in order to upgrade things in stages?

I'm building up a road bike and will probably go with Ultegras for the price/performance. However, I've heard that Ultegra STI's are poorly made and fall apart after a year or two, or at least become really pokey, and can't really be fixed. (If this is not true, or if Shimano has beefed up the
Ultegras in recent years, please let me know.)

So I'm wondering if it's possible to go with Campy Ergo's

re:American Classic conversion cassette questions

I just bought a 12-25 10spd American Classic conversion cassette to allow me to use my new Mavic Cosmos wheels with my new Campy 10spd Centaur drivetrain. I'm wondering though if it's possible to buy spare individual cogs to "convert" this conversion cassette to a different ratio, and if so from whom?

Specifically, I'd like to be able to swap out the 4 highest gears, which come as two pinned-toge
